Balsamic & Mustard Marinade
with Marinated Chicken Thighs

Ingredients
Marinade
- ¼ cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon Colman’s Wholegrain Mustard
Chicken thighs
- 8 x chicken thighs
- 2 x fresh mangoes, skinned & sliced
- 8 x peeled baby onions
- 400ml pre-made gravy (jus)
- Fresh thyme
Method
- Combine marinade ingredients and marinate chicken overnight.
- Place marinated chicken and baby onions on an oven tray and roast at 180°C for approximately 30 mins or until chicken is cooked.
- Drain juices and mix with pre-made gravy or jus.
- Place chicken, onions, thyme, mango and gravy in skillet pan or similar.
- Heat and serve with roasted vegetables.
