Balsamic & Mustard Marinade with Marinated Chicken Thighs

Serves 4

Ingredients

Marinade
  • ¼ cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Colman’s Wholegrain Mustard
Chicken thighs
  • 8 x chicken thighs
  • 2 x fresh mangoes, skinned & sliced
  • 8 x peeled baby onions
  • 400ml pre-made gravy (jus)
  • Fresh thyme

Method

  1. Combine marinade ingredients and marinate chicken overnight.
  2. Place marinated chicken and baby onions on an oven tray and roast at 180°C for approximately 30 mins or until chicken is cooked.
  3. Drain juices and mix with pre-made gravy or jus.
  4. Place chicken, onions, thyme, mango and gravy in skillet pan or similar.
  5. Heat and serve with roasted vegetables.
