Colman’s Crumbed Cod

Ingredients
- 2 x cod fillet
- 1 tablespoon Colman’s Dijon Mustard
- 1 tablespoon mayonnaise (garlic powder and cheese powder can be used instead of mayonnaise if you wish)
- Flour
- Bread crumbs
- Olive oil
- Salt & pepper
Method
- Add salt and pepper to cod fillet, and cover with flour.
- Pour on olive oil and grill both sides of the cod on the BBQ.
- Coat with Colman’s Dijon Mustard, add mayonnaise and bread crumbs, then drizzle olive oil on top.
- Cover the fish with the lid of BBQ or wrap in tin foil.
- Grill for 5 minutes and serve.
