Colman’s Crumbed Cod

Ingredients

  • 2 x cod fillet
  • 1 tablespoon Colman’s Dijon Mustard
  • 1 tablespoon mayonnaise (garlic powder and cheese powder can be used instead of mayonnaise if you wish)
  • Flour
  • Bread crumbs
  • Olive oil
  • Salt & pepper

Method

  1. Add salt and pepper to cod fillet, and cover with flour.
  2. Pour on olive oil and grill both sides of the cod on the BBQ.
  3. Coat with Colman’s Dijon Mustard, add mayonnaise and bread crumbs, then drizzle olive oil on top.
  4. Cover the fish with the lid of BBQ or wrap in tin foil.
  5. Grill for 5 minutes and serve.
