Colman’s Dressing
with Courgette Fritters
& Smoked Salmon
Serves 6
Ingredients
Colman’s dressing for fritters (also makes a great stand-alone dip)
- 1 cup mayonnaise
- 2 tablespoons honey
- ¼ teaspoon ground coriander
- ¼ teaspoon ground paprika
- 1 tablespoon Colman’s Dijon Mustard
Fritters
- 2 x grated courgette
- 3 eggs
- 200ml soda water
- 1 teaspoon cracked pepper
- 1 teaspoon cumin seed
- 2 teaspoons sea salt
- 1 cup flour
- 18 slices of cold smoked salmon (approximately 250g)
- Fresh dill
Method
- Mix all the fritter ingredients together. If the mixture is a little wet add some more flour.
- Fry a teaspoon-sized measure of the mixture in a little rice bran oil until cooked on both sides.
- When cool, roll a piece of smoked salmon on top, drizzle with dressing and garnish with dill.
