with Courgette Fritters
& Smoked Salmon

Colman’s Dressing with Courgette Fritters & Smoked Salmon

Serves 6

Ingredients

Colman’s dressing for fritters (also makes a great stand-alone dip)
  • 1 cup mayonnaise
  • 2 tablespoons honey
  • ¼ teaspoon ground coriander
  • ¼ teaspoon ground paprika
  • 1 tablespoon Colman’s Dijon Mustard
Fritters
  • 2 x grated courgette
  • 3 eggs
  • 200ml soda water
  • 1 teaspoon cracked pepper
  • 1 teaspoon cumin seed
  • 2 teaspoons sea salt
  • 1 cup flour
  • 18 slices of cold smoked salmon (approximately 250g)
  • Fresh dill

Method

  1. Mix all the fritter ingredients together. If the mixture is a little wet add some more flour.
  2. Fry a teaspoon-sized measure of the mixture in a little rice bran oil until cooked on both sides.
  3. When cool, roll a piece of smoked salmon on top, drizzle with dressing and garnish with dill.
