Colman’s Mustard Mash
with Eye Fillet

Ingredients
Colman’s mustard mash
- 1kg agria potatoes
- 2 tablespoons butter
- ½ cup warm cream
- 1 tablespoon Colman’s Dijon Mustard
Eye fillet
- 4 x beef eye fillet
- Rice bran oil
- Salt & pepper
- Peeled parsnip shavings (shallow fried till crisp, then drained)
Method
- Cook potatoes in water, drain.
- Mash with butter, cream and Colman’s Dijon Mustard, add salt if needed.
- Serve beef eye fillet on mash, top with parsnip shavings, green beans, and sea salt.
- Drizzle with lemon oil and add a dollop of Colman’s Wholegrain Mustard.
