Colman’s Mustard Mash with Eye Fillet

Serves 4

Ingredients

Colman’s mustard mash
  • 1kg agria potatoes
  • 2 tablespoons butter
  • ½ cup warm cream
  • 1 tablespoon Colman’s Dijon Mustard
Eye fillet
  • 4 x beef eye fillet
  • Rice bran oil
  • Salt & pepper
  • Peeled parsnip shavings (shallow fried till crisp, then drained)

Method

  1. Cook potatoes in water, drain.
  2. Mash with butter, cream and Colman’s Dijon Mustard, add salt if needed.
  3. Serve beef eye fillet on mash, top with parsnip shavings, green beans, and sea salt.
  4. Drizzle with lemon oil and add a dollop of Colman’s Wholegrain Mustard.
