Dijon & Chilli Marinade with Pork Stir Fry & Rice Noodles

Serves 4

Ingredients

Dijon & chilli marinade
  • ½ cup white wine
  • 2 teaspoons sesame seeds
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 2 tablespoons Colman’s Dijon Mustard
Stir fry
  • 300g thinly sliced pork
  • 2 cups sliced snow peas
  • Spring onions
  • Red capsicum
  • 2 tablespoons coriander
  • 1 small chilli, sliced
  • Sesame oil
  • 225g cooked rice noodles, drizzled with olive oil

Method

  1. Combine marinade ingredients, pour over sliced pork, and leave for 1 hour.
  2. Heat sesame oil in frying pan or wok; add drained pork (keep marinade).
  3. Sauté for 1 min, add 2 cups sliced vegetables and a little marinade, coriander and chilli.
  4. When cooked, spoon over rice noodles.
