Honey Mustard Glaze
with Barbecued Salmon

Ingredients
Honey mustard glaze
- 2 tablespoons toasted sesame seeds
- 4 tablespoons honey
- ¼ cup soy sauce
- 2 tablespoons cider vinegar
- 2 tablespoons Colman’s Dijon Mustard
Salmon
- 1 side fresh salmon (skin on, bones out)
- 1 cup freshly chopped parsley
- Coriander and mint
- 2 spring onions sliced
- 6 chopped cherry tomatoes
- 2 tablespoons olive oil
- Sea salt & pepper
Method
- Place the salmon on top of baking paper and 2 layers of tin foil, combine ingredients for glaze and pour over.
- Bring the 2 sides of foil together, seal then place on a preheated BBQ for approximately 20 mins.
- To make salsa, combine parsley, herbs, onion and tomatoes and place on top of salmon or serve separately.
- Serve with a fresh salad and French bread.
