Honey Mustard Glaze with Barbecued Salmon

Ingredients

Honey mustard glaze
  • 2 tablespoons toasted sesame seeds
  • 4 tablespoons honey
  • ¼ cup soy sauce
  • 2 tablespoons cider vinegar
  • 2 tablespoons Colman’s Dijon Mustard
Salmon
  • 1 side fresh salmon (skin on, bones out)
  • 1 cup freshly chopped parsley
  • Coriander and mint
  • 2 spring onions sliced
  • 6 chopped cherry tomatoes
  • 2 tablespoons olive oil
  • Sea salt & pepper

Method

  1. Place the salmon on top of baking paper and 2 layers of tin foil, combine ingredients for glaze and pour over.
  2. Bring the 2 sides of foil together, seal then place on a preheated BBQ for approximately 20 mins.
  3. To make salsa, combine parsley, herbs, onion and tomatoes and place on top of salmon or serve separately.
  4. Serve with a fresh salad and French bread.
