Marinated Beef Fillet

Serves 8-10

Ingredients

  • 2 x 3kg eye fillet (porterhouse or sirloin)
  • ½ cup cream
Marinade
  • 4 tablespoons Colman’s Dijon Mustard
  • 4 tablespoons Colman’s Wholegrain Mustard
  • 4 tablespoons brown sugar
  • 4 tablespoons tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons red wine vinegar
  • 2 tablespoons oil
  • 2 cloves garlic, crushed

Method

  1. Mix together marinade ingredients, marinate meat overnight.
  2. Scrape off marinade and set aside, then sear fillet.
  3. Cook on a covered BBQ at a moderate heat until just cooked.
  4. Check at 45 mins and 10 mins thereafter, do not overcook.
  5. Let stand for 20 mins or so.
  6. Make a sauce by combining the marinade with cream and meat juices, pour over meat and serve.
