Minted BBQ Lamb Chops

Serves 5

Ingredients

  • 8-10 loin lamb chops
  • Colman’s Classic Mint Sauce
Cucumber mint sauce
  • 150ml plain yoghurt
  • 1 cup shredded telegraph cucumber (seeds removed, squeezed dry and chopped)
  • 1 clove garlic, crushed
  • 15 ml Colman’s Classic Mint Sauce
  • Salt & freshly ground pepper to taste

Method

  1. Mix sauce ingredients in a bowl, seasoning last.
  2. Cover and refrigerate for 1 hour.
  3. Brush chops with some Colman’s Classic Mint Sauce on both sides. Stand for 15 mins to let flavours develop.
  4. Heat BBQ and cook chops until still a little pink. Rest meat.
  5. Serve with cucumber mint sauce and salad.
