Potato Salad
with Mustard Dressing

Ingredients
Potato salad
- 700g washed potatoes
- 1 red onion, finely sliced
- 6 boiled eggs, quartered
- 12 dried tomatoes, finely sliced
- 1 bunch parsley leaves
Mustard dressing
- 1 cup light sour cream
- Juice of 2 lemons
- 2 tablespoons olive oil
- 1 tablespoon Colman’s Dijon Mustard
Method
- Bring a pot of water to the boil, add potatoes and a pinch of salt, cook until just soft.
- Drain and peel the potatoes while still hot, then quarter the potatoes.
- Combine the potatoes, onion, eggs, tomatoes and parsley.
- Whisk the mustard dressing ingredients together and season lightly.
- Pour the dressing over the potatoes while they are still warm.
- Refrigerate for at least 1 hour before serving.
