Potato Salad

with Mustard Dressing

Ingredients

Potato salad
  • 700g washed potatoes
  • 1 red onion, finely sliced
  • 6 boiled eggs, quartered
  • 12 dried tomatoes, finely sliced
  • 1 bunch parsley leaves
Mustard dressing
  • 1 cup light sour cream
  • Juice of 2 lemons
  • 2 tablespoons olive oil
  • 1 tablespoon Colman’s Dijon Mustard

Method

  1. Bring a pot of water to the boil, add potatoes and a pinch of salt, cook until just soft.
  2. Drain and peel the potatoes while still hot, then quarter the potatoes.
  3. Combine the potatoes, onion, eggs, tomatoes and parsley.
  4. Whisk the mustard dressing ingredients together and season lightly.
  5. Pour the dressing over the potatoes while they are still warm.
  6. Refrigerate for at least 1 hour before serving.
